A Brightlord was a high ranking member of light eyes culture on Roshar.

Kaladin's eyes changes during his fight to save Dalinar. Although they changed back afterwards.[1]

It might be that the reasons are that the Knight Radiants all were useing Surgebinding and Shards, and thus all had light eyes even if they didn't have them at birth.
